Meatloaf:

  • 1 ½ pounds ground beef
  • ½ cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • ¼ cup ketchup, plus extra for topping
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined.
  2. If using, fold in shredded cheddar cheese. Shape the mixture into a loaf that fits your crockpot.
  3. Place the meatloaf into the slow cooker. Spread additional ketchup evenly over the top.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  5. Remove from crockpot and let rest for 10 minutes before slicing.
