Meatloaf:
- 1 ½ pounds ground beef
- ½ cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- ½ cup milk
- ¼ cup ketchup, plus extra for topping
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup shredded cheddar cheese (optional)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined.
- If using, fold in shredded cheddar cheese. Shape the mixture into a loaf that fits your crockpot.
- Place the meatloaf into the slow cooker. Spread additional ketchup evenly over the top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
- Remove from crockpot and let rest for 10 minutes before slicing.

- For added flavor, stir in chopped bell peppers or use BBQ sauce instead of ketchup.
