Description

These Crunchy Chickpea Caesar Wraps are a delicious and satisfying vegetarian meal option. Crispy roasted chickpeas, creamy Caesar dressing, and fresh veggies all wrapped up in a whole wheat or spinach tortilla.


Ingredients

Roasted Chickpeas:

1 (15-ounce) can chickpeas, drained, rinsed, and patted dry; 1 tablespoon olive oil; 1/2 teaspoon garlic powder; 1/2 teaspoon smoked paprika; salt and black pepper to taste;

Caesar Dressing:

1/4 cup mayonnaise or vegan mayo; 1 tablespoon lemon juice; 1 teaspoon Dijon mustard; 1 teaspoon capers, minced; 1 clove garlic, minced; 1 tablespoon olive oil; 1 tablespoon nutritional yeast (or more Parmesan); salt and pepper to taste;

Wraps:

4 large whole wheat or spinach wraps; 2 cups chopped romaine lettuce; 1/4 cup shredded Parmesan cheese; 1/2 avocado, sliced (optional);


Instructions

  1. Preheat oven and roast chickpeas: Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast on a baking sheet for 25–30 minutes until golden and crispy, shaking halfway through.
  2. Prepare Caesar dressing: Whisk together mayonnaise, lemon juice, Dijon mustard, capers, garlic, olive oil, nutritional yeast, salt, and pepper. Adjust seasoning to taste.
  3. Assemble wraps: Fill each tortilla with romaine lettuce, Parmesan cheese, roasted chickpeas, and avocado slices if using. Drizzle with Caesar dressing. Roll tightly, slice, and serve.
