Description

Enjoy a delightful and festive creamy minty pudding perfect for parties and gatherings. This easy no-cook recipe combines instant vanilla pudding with crème de menthe and Cool Whip to create a light, fluffy, and refreshing dessert served in individual cups, beautifully garnished with whipped cream and maraschino cherries.

Ingredients

Scale

Pudding Base

  • 1 (3 oz) box instant vanilla pudding
  • 1 ½ cups cold milk
  • 1 teaspoon vanilla extract
  • ¼ cup crème de menthe (green)

Topping and Garnishes

  • 1 (8 oz) tub Cool Whip, thawed
  • 12 drops green food coloring
  • Whipped cream, for garnish
  • Maraschino cherries, for garnish
  • 12 (2 oz) plastic soufflé cups with lids

Instructions

  1. Make the pudding base: In a large mixing bowl, whisk together the instant vanilla pudding mix, cold milk, and vanilla extract until the mixture is smooth and starts to thicken slightly, about 2 minutes.
  2. Incorporate crème de menthe: Stir in the green crème de menthe until fully combined, infusing the pudding mixture with a refreshing mint flavor.
  3. Fold in whipped topping and color: Gently fold in the thawed Cool Whip along with 1-2 drops of green food coloring, mixing gently until the pudding mixture is light green, fluffy, and evenly combined.
  4. Portion into cups: Spoon or pipe the pudding mixture into 2 oz plastic soufflé cups, filling each about three-quarters full to achieve perfect individual servings.
  5. Chill to set: Cover each cup with its lid and refrigerate for at least 1 hour to allow the pudding to firm up and the flavors to meld together.
  6. Garnish and serve: Just before serving, top each cup with a swirl of whipped cream and a maraschino cherry for a festive and appealing presentation.

Notes

  • Make sure the milk is very cold before mixing to help the pudding set properly.
  • If you prefer a stronger mint flavor, you can add a bit more crème de menthe to taste.
  • The green food coloring is optional and used for festive presentation.
  • You can prepare the pudding mixture a day ahead but add whipped cream and cherries just before serving.
  • For a non-alcoholic version, substitute crème de menthe with mint extract or omit entirely.
