Instructions

  1. Preheat the oven and prepare the baking sheet: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, beat together the coconut oil (or dairy-free butter), brown sugar, and granulated sugar until well combined. Add the egg and vanilla extract and mix until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms. Fold in the dairy-free chocolate chips.
  5. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are just set.
  6. Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a vegan version, replace the egg with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mixed and rested for 5 minutes).
