- 1 cup fresh dandelion petals (yellow parts only, no green bits)
- 1 cup water
- 2 cups granulated sugar
- 1 tablespoon lemon juice
- optional: 1 teaspoon light corn syrup (to prevent crystallization)
Instructions
- Rinse the dandelion petals thoroughly and pat them dry.
- In a small saucepan, combine the petals and water. Bring to a gentle simmer over medium heat, then reduce to low and let steep for 10–15 minutes.
- Strain the liquid into a clean saucepan, pressing on the petals to extract all the liquid.
- Add the sugar, lemon juice, and corn syrup if using. Stir over medium heat until the sugar dissolves.
- Increase the heat to medium-high and cook without stirring until the mixture reaches the hard crack stage (300°F or 150°C) on a candy thermometer.
- Immediately pour the hot syrup into silicone candy molds or drop by spoonfuls onto parchment paper.
- Let cool and harden completely at room temperature before removing from molds or peeling off the paper.
Notes
- Only use dandelions that have not been treated with pesticides or herbicides.
- You can add a few drops of yellow food coloring or flavor extract (like vanilla or lemon) if desired.
- Store candy in an airtight container at room temperature with wax paper between layers to prevent sticking.
