  • 1 cup fresh dandelion petals (yellow parts only, no green bits)
  • 1 cup water
  • 2 cups granulated sugar
  • 1 tablespoon lemon juice
  • optional: 1 teaspoon light corn syrup (to prevent crystallization)

Instructions

  1. Rinse the dandelion petals thoroughly and pat them dry.
  2. In a small saucepan, combine the petals and water. Bring to a gentle simmer over medium heat, then reduce to low and let steep for 10–15 minutes.
  3. Strain the liquid into a clean saucepan, pressing on the petals to extract all the liquid.
  4. Add the sugar, lemon juice, and corn syrup if using. Stir over medium heat until the sugar dissolves.
  5. Increase the heat to medium-high and cook without stirring until the mixture reaches the hard crack stage (300°F or 150°C) on a candy thermometer.
  6. Immediately pour the hot syrup into silicone candy molds or drop by spoonfuls onto parchment paper.
  7. Let cool and harden completely at room temperature before removing from molds or peeling off the paper.

Notes

  • Only use dandelions that have not been treated with pesticides or herbicides.
  • You can add a few drops of yellow food coloring or flavor extract (like vanilla or lemon) if desired.
  • Store candy in an airtight container at room temperature with wax paper between layers to prevent sticking.
