Dandelion Candy:

- 1 tablespoon honey
- 1/2 teaspoon lemon juice
- powdered sugar for dusting (optional)
Instructions
- Cook the Syrup: In a small saucepan over medium heat, combine the granulated sugar, water, honey, and lemon juice. Stir until the sugar is dissolved and the mixture comes to a gentle boil.
- Reach Hard Crack Stage: Continue boiling until the syrup reaches the hard crack stage (about 300°F or 150°C on a candy thermometer).
- Add Dandelion Petals: Remove from heat and quickly stir in the dandelion petals.
- Create Candies: Spoon small drops of the mixture onto a parchment-lined baking sheet to form individual candies.
- Cool and Store: Let the candies cool completely until hardened. Dust with powdered sugar if desired and store in an airtight container.
