Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract and mix until smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Add Mix-Ins: Fold in the dark chocolate chunks and chopped pistachios.
  7. Scoop and Bake: Scoop about 2 tablespoons of dough for each cookie and place them 2 inches apart on the prepared baking sheets. Bake for 10-12 minutes until the edges are lightly golden but the centers are still soft.
