Cake:
- 1 cup all-purpose flour
- 1/2 cup unsweetened dark cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot coffee or hot water
Dark Chocolate Mousse:
- 8 ounces dark chocolate, chopped
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Cake: Preheat oven to 350°F (175°C). Grease and line an 8-inch springform pan. Mix dry ingredients. Whisk eggs, oil, vanilla; combine wet and dry mixtures. Stir in buttermilk and coffee/water. Bake 25-30 mins. Cool.
- Dark Chocolate Mousse: Melt chocolate, let cool. Whip cream, sugar, vanilla to soft peaks. Fold cream into chocolate. Spread mousse on cake. Chill 4 hours.
