Cake:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened dark cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup hot coffee or hot water

Dark Chocolate Mousse:

  • 8 ounces dark chocolate, chopped
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Cake: Preheat oven to 350°F (175°C). Grease and line an 8-inch springform pan. Mix dry ingredients. Whisk eggs, oil, vanilla; combine wet and dry mixtures. Stir in buttermilk and coffee/water. Bake 25-30 mins. Cool.
  2. Dark Chocolate Mousse: Melt chocolate, let cool. Whip cream, sugar, vanilla to soft peaks. Fold cream into chocolate. Spread mousse on cake. Chill 4 hours.
