Ingredients
Scale
Filling
- 1/2 cup cream cheese, softened
- 2 tbsp sugar
- 1/2 tsp vanilla extract
- 1/2 cup strawberries, diced
Tortillas and Topping
- 4 tortillas, 6-inch
- 2 tbsp butter, softened
- 1 tsp sugar
- 1/2 tsp cinnamon
For Serving
- Strawberry sauce for dipping
Instructions
- Prepare the Filling: In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries, taking care not to mash them, to retain some texture.
- Assemble First Quesadilla: Spread half of the strawberry cream cheese mixture evenly onto one tortilla, covering the surface but leaving a small border around the edges to prevent overflow during cooking.
- Heat the Pan: Place a pan over medium-high heat and add 1 teaspoon of butter, allowing it to melt completely and coat the surface of the pan for even browning.
- Cook First Side: Place the tortilla with the cream cheese side facing up in the pan. Spread 1 teaspoon of softened butter on one side of a second tortilla and place it butter-side-up on top of the first tortilla, creating a quesadilla sandwich.
- Brown the Quesadilla: Cook the quesadilla for 2-3 minutes on one side until golden brown and crispy. Carefully flip it over and cook the other side for an additional 2-3 minutes, checking to ensure both sides are golden.
- Add Cinnamon Sugar: Once cooked, remove the quesadilla from the pan and sprinkle the mixed cinnamon and sugar evenly on top to add a sweet, spiced finish.
- Repeat and Serve: Repeat the assembly and cooking process with the remaining ingredients to make the second quesadilla. Let both quesadillas rest for 2 minutes to set, then slice into wedges and serve warm with strawberry sauce for dipping.
Notes
- Use softened cream cheese to ensure smooth mixing and easy spreading.
- Diced fresh strawberries provide a fresh burst of flavor; frozen can be used but thaw and drain first.
- Adjust sugar in filling and cinnamon sugar topping to taste based on sweetness preference.
- Cook over medium-high heat but watch carefully to avoid burning the tortillas.
- Strawberry sauce can be store-bought or homemade for dipping.
- For added texture, sprinkle chopped nuts inside the filling if desired.
