- 10 cups water
- ⅔ cup baking soda
- 1 egg yolk, beaten with 1 tablespoon water

- 1 tablespoon vegetable oil (for greasing)
For the cheese sauce:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- ¾ cup beer
- 2 teaspoons Dijon mustard
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper (optional)
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions
- Make the pretzels: In a bowl, combine warm beer, sugar, and yeast. Add flour, salt, and melted butter. Knead, then let rise. Shape into pretzels, boil in baking soda water, brush with egg wash, sprinkle with salt, and bake.
- Prepare the cheese sauce: Melt butter, whisk in flour, add milk and beer, then spices and cheese. Cook until smooth.
