For the Crust:
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon granulated sugar

For the Filling:
- 6–7 cups peeled and sliced tart apples (such as Granny Smith)
- ¾ cup granulated sugar
- ¼ cup packed brown sugar
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 tablespoon butter (cut into small pieces)
For Assembly:
- 1 egg (beaten, for egg wash)
- 1 tablespoon milk
Instructions
- Create the Crust: In a large bowl, mix 2 ½ cups flour, 1 teaspoon salt, and 1 teaspoon sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time, mixing until the dough begins to form. Divide in half, shape into disks, wrap in plastic, and chill for at least 1 hour.
- Prepare the Filling: Preheat oven to 425°F (220°C). In a large bowl, toss the sliced apples with granulated sugar, brown sugar, lemon juice, flour, cinnamon, nutmeg, and salt until well coated.
- Assemble the Pie: On a floured surface, roll out one dough disk to fit a 9-inch pie dish. Place the crust in the pie dish and fill with the apple mixture. Dot with butter. Roll out the second dough disk and place over the apples. Trim and crimp the edges, and cut slits in the top to vent. Brush the crust with a mixture of beaten egg and milk.
- Bake and Serve: Bake for 45–55 minutes, or until the crust is golden brown and the filling is bubbling. Cover the edges with foil if they brown too quickly. Cool for at least 2 hours before serving.
Notes
- For extra flavor, mix in ½ teaspoon vanilla extract with the apple filling.
