Vegetable Base:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1/2 head green cabbage, chopped
- 1 zucchini, diced
- 1 bell pepper, chopped
Broth and Seasonings:
- 1 (14.5-ounce) can diced tomatoes, with juice
- 6 cups low-sodium vegetable broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional:
- 2 cups fresh spinach or kale
- juice of 1/2 lemon
- fresh parsley, for garnish
Instructions
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
- Add Vegetables: Stir in cabbage, zucchini, and bell pepper. Cook for 2–3 minutes.
- Simmer: Add diced tomatoes, vegetable broth, oregano, basil, thyme, salt, and pepper. Bring to a boil, then simmer for 25–30 minutes until vegetables are tender.
- Finish: Stir in spinach or kale if using, simmer for another 2–3 minutes. Remove from heat, stir in lemon juice. Garnish with parsley and serve hot.
