Ingredients

Vegetable Base:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1/2 head green cabbage, chopped
  • 1 zucchini, diced
  • 1 bell pepper, chopped

Broth and Seasonings:

  • 1 (14.5-ounce) can diced tomatoes, with juice
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional:

  • 2 cups fresh spinach or kale
  • juice of 1/2 lemon
  • fresh parsley, for garnish

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened.
  2. Add Vegetables: Stir in cabbage, zucchini, and bell pepper. Cook for 2–3 minutes.
  3. Simmer: Add diced tomatoes, vegetable broth, oregano, basil, thyme, salt, and pepper. Bring to a boil, then simmer for 25–30 minutes until vegetables are tender.
  4. Finish: Stir in spinach or kale if using, simmer for another 2–3 minutes. Remove from heat, stir in lemon juice. Garnish with parsley and serve hot.
