  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves

Peanut Sauce:

  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1/4 cup warm water (more as needed)

Instructions

  1. Prepare Wraps: Trim collard green stems or soak rice paper in warm water until soft.
  2. Assemble: Lay out a collard leaf or rice paper. Add veggies and herbs in the center. Roll up tightly.
