Peanut Sauce:

- 2 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon fresh lime juice
- 1 teaspoon grated fresh ginger
- 1/4 cup warm water (more as needed)
Instructions
- Prepare Wraps: Trim collard green stems or soak rice paper in warm water until soft.
- Assemble: Lay out a collard leaf or rice paper. Add veggies and herbs in the center. Roll up tightly.
- Make Peanut Sauce: Whisk together peanut butter, soy sauce, vinegar, honey, lime juice, and ginger. Thin with warm water.
