- 6 large collard green leaves or rice paper wrappers

- 1 yellow bell pepper, thinly sliced
- 1 medium carrot, julienned
- 1 small cucumber, julienned
- 1 cup purple cabbage, thinly shredded
- 1 avocado, sliced
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
For the Peanut Sauce:
- 1/4 cup creamy peanut butter
- 1 tablespoon soy sauce or tamari
- 1 tablespoon lime juice
- 1 tablespoon maple syrup or honey
- 1 teaspoon grated fresh ginger
- 1 garlic clove, minced
- 2–4 tablespoons warm water (to thin)
Instructions
- Prep the Ingredients: If using collard greens, trim the thickest part of the stem and lightly blanch the leaves in boiling water for 30 seconds, then pat dry. If using rice paper wrappers, soak according to package instructions until pliable.
- Make the Peanut Sauce: Whisk together peanut butter, soy sauce, lime juice, maple syrup, ginger, garlic, and warm water until smooth and creamy. Adjust to desired thickness.
- Assemble the Roll-Ups: Lay a collard green leaf or rice paper wrapper on a clean surface. Layer vegetables and herbs in the center, then fold in the sides and roll tightly like a burrito. Repeat with remaining ingredients.
- Serve: Slice each roll in half and serve with the peanut sauce for dipping.
