Pasta:
- 12 ounces rotini pasta
Salad:
- 1 1/2 cups chopped dill pickles
- 2/3 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup chopped celery
- 1/4 cup fresh chopped dill
Dressing:
- 1/2 cup pickle juice (divided)
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Cook the pasta: Boil the rotini pasta in salted water until al dente. Drain and toss with 1/4 cup pickle juice. Let cool.
- Prepare the salad: In a large bowl, combine pickles, cheese, red onion, celery, and dill.
- Make the dressing: Whisk together remaining pickle juice, mayonnaise, sour cream, mustard, salt, and pepper.
- Combine: Add pasta to the salad mixture, pour dressing over, and toss to coat.
- Chill and serve: Refrigerate for at least 1 hour before serving. Stir well before serving.
Notes
- For extra tang, add a tablespoon of pickle brine just before serving.
- You can substitute Greek yogurt for the sour cream if desired.
- Best served cold and made a few hours ahead.
