Description

This Dill Pickle Pasta Salad is a tangy and creamy side dish perfect for summer gatherings. With a combination of pasta, dill pickles, cheddar cheese, and a flavorful dressing, this salad is sure to be a crowd-pleaser.

Pasta:

  • 12 ounces rotini pasta

Salad:

  • 1 1/2 cups chopped dill pickles
  • 2/3 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup chopped celery
  • 1/4 cup fresh chopped dill

Dressing:

  • 1/2 cup pickle juice (divided)
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta: Boil the rotini pasta in salted water until al dente. Drain and toss with 1/4 cup pickle juice. Let cool.
  2. Prepare the salad: In a large bowl, combine pickles, cheese, red onion, celery, and dill.
  3. Make the dressing: Whisk together remaining pickle juice, mayonnaise, sour cream, mustard, salt, and pepper.
  4. Combine: Add pasta to the salad mixture, pour dressing over, and toss to coat.
  5. Chill and serve: Refrigerate for at least 1 hour before serving. Stir well before serving.

Notes

  • For extra tang, add a tablespoon of pickle brine just before serving.
  • You can substitute Greek yogurt for the sour cream if desired.
  • Best served cold and made a few hours ahead.
