Description

These Dill Pickle Tofu Bites are a flavorful and crispy vegan snack or appetizer. Marinated in dill pickle juice and baked until golden, these tofu bites are perfect for dipping or adding to salads, wraps, or bowls.

Tofu Bites:

  • 1 (14-ounce) block extra-firm tofu, pressed and cut into 1-inch cubes
  • ½ cup dill pickle juice
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • Salt and black pepper to taste
  • Optional: 1 tablespoon nutritional yeast for extra flavor

Instructions

  1. Marinate Tofu: Place tofu cubes in a dish, pour pickle juice over them, cover, and marinate in the fridge for at least 1 hour.
  2. Prepare Tofu: Drain and pat dry the tofu. Preheat oven to 400°F and line a baking sheet with parchment paper.
  3. Coat Tofu: In a bowl, toss tofu with olive oil, cornstarch, garlic powder, onion powder, dill, salt, pepper, and nutritional yeast if using.
  4. Bake: Spread tofu on the baking sheet, bake for 30–35 minutes, flipping halfway through until golden and crispy.
