- 1 pound ground beef
- 1 packet taco seasoning
- 1/4 cup water
For the Salad:
- 1 large head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, rinsed and drained
- 1 cup canned corn, drained
- 1/2 cup red onion, diced
- 1 cup shredded cheddar cheese
- 1 large avocado, diced
- 2 cups nacho cheese Doritos, slightly crushed
For the Dressing:
- 1/2 cup ranch dressing
- 1/2 cup salsa
Instructions
- Cook the Taco Meat: In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain any excess fat. Stir in the taco seasoning and water, then simmer for 3 minutes until the beef is well coated.
- Assemble the Salad: In a large salad bowl, layer the lettuce, tomatoes, black beans, corn, onion, cheese, and avocado. Add the cooked taco meat.
- Make the Dressing: In a small bowl, whisk together the ranch dressing and salsa. Pour over the salad and toss gently to combine.
- Finish and Serve: Just before serving, add the crushed Doritos and toss again. Serve immediately.
Notes
- For a lighter version, use ground turkey or chicken instead of beef.
- Greek yogurt can replace ranch dressing for a healthier twist.
- Add jalapeños or hot sauce for extra spice.
