  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot brewed coffee (or hot water)

For the Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream (plus more as needed)
  • 2 teaspoons vanilla extract
  • pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add wet ingredients: Add eggs, buttermilk, vegetable oil, and vanilla extract. Beat until well combined. Slowly add hot coffee and mix until smooth.
  4. Bake the cakes: Divide batter between pans. Bake for 30–35 minutes. Cool in pans for 10 minutes, then cool completely on wire racks.
  5. Make the frosting: Beat butter until creamy. Add powdered sugar, cocoa powder, vanilla, salt, and cream. Beat until fluffy.
  6. Assemble the cake: Place one cake layer on a plate, spread buttercream, add second layer, and frost the top and sides. Slice and serve!
