Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

- Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

- Form Dough: Scoop rounded tablespoons of dough and, if desired, roll in granulated sugar before placing them 2 inches apart on the prepared baking sheets.
- Bake: Bake for 10–12 minutes, or until the edges are just turning golden and the centers are set.
- Cool: Let cool on the pan for 2 minutes before transferring to a wire rack.
