  • 1 tablespoon olive oil
  • 1 pound beef stew meat, cut into small cubes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 cup pearl barley
  • 6 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes with juices
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Heat olive oil: In a large pot or Dutch oven over medium-high heat, heat olive oil.
  2. Cook beef: Add beef and cook for 4 to 5 minutes until browned on all sides.
  3. Sauté aromatics: Add onion and garlic, sauté for 2 minutes until fragrant.
  4. Add ingredients: Stir in carrots, celery, barley, beef broth, diced tomatoes, salt, pepper, thyme, and bay leaf.
  5. Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 45 to 50 minutes until beef is tender and barley is cooked.
  6. Adjust seasoning: Remove bay leaf, adjust seasoning to taste. Garnish with parsley if desired. Serve hot.

  • You can use leftover roast beef or ground beef to speed up prep.
  • For a slow cooker method, cook on low for 6–7 hours. Add extra broth or water if soup thickens.
