Ingredients:
- 1 tablespoon olive oil
- 1 pound beef stew meat, cut into small cubes
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1 cup pearl barley
- 6 cups beef broth
- 1 (14.5-ounce) can diced tomatoes with juices
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Heat olive oil: In a large pot or Dutch oven over medium-high heat, heat olive oil.
- Cook beef: Add beef and cook for 4 to 5 minutes until browned on all sides.
- Sauté aromatics: Add onion and garlic, sauté for 2 minutes until fragrant.
- Add ingredients: Stir in carrots, celery, barley, beef broth, diced tomatoes, salt, pepper, thyme, and bay leaf.
- Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 45 to 50 minutes until beef is tender and barley is cooked.
- Adjust seasoning: Remove bay leaf, adjust seasoning to taste. Garnish with parsley if desired. Serve hot.

- You can use leftover roast beef or ground beef to speed up prep.
- For a slow cooker method, cook on low for 6–7 hours. Add extra broth or water if soup thickens.
