Instructions

  1. Prepare the Filling: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion and green pepper, sautéing until softened and fragrant, about 3-4 minutes. Then add the diced ham and cook for another 2 minutes, stirring occasionally.
  2. Cook the Eggs: In a bowl, whisk together the 8 eggs, 2 tablespoons of milk, and 1 teaspoon of hot sauce until well combined. Pour the egg mixture into the skillet with the ham and vegetables. Cook, stirring gently, until the eggs are scrambled and cooked through but still moist, about 4-5 minutes. Remove from heat.
  3. Prepare the Tortilla Base: Preheat your oven to 400°F (200°C). Lightly brush each tortilla or whole wheat pita with olive oil on both sides. Place them on a baking sheet lined with parchment paper.
