  • 1 pound boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh chopped cilantro for garnish

Instructions

  1. Heat olive oil: Heat olive oil in a large pot over medium heat.
  2. Sauté vegetables: Add diced onion and red bell pepper and sauté until softened. Stir in minced garlic.
  3. Cook chicken: Add the diced chicken and cook until browned and cooked through.
  4. Add remaining ingredients: Stir in tomatoes, beans, chicken broth, spices, salt, and pepper.
  5. Simmer: Bring to a boil, then simmer uncovered for 20-25 minutes.
