For the Chicken:
- 1 pound boneless, skinless chicken breasts (thinly sliced)
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Filling:
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 small red onion (sliced)
Additional:
- 4 large flour tortillas
- Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro
Instructions
- Prepare the Chicken: In a large bowl, combine olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Add the sliced chicken and toss to coat.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes until cooked through and lightly browned. Remove from skillet and set aside.
- Sauté the Vegetables: In the same skillet, add bell peppers and onions. Sauté for 4–5 minutes until tender-crisp.
- Combine and Assemble: Return the chicken to the skillet with the vegetables. Toss to combine. Warm the tortillas, fill each with the chicken and pepper mixture. Add desired toppings and wrap tightly to serve.
Notes
- Use pre-cooked rotisserie chicken for a quick shortcut.
- Swap in whole wheat or low-carb tortillas if desired.
- For extra heat, add jalapeños or hot sauce.
