Coating:

Sauce:

  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine or chicken broth
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice (about 1 large lemon)
  • 1/4 cup capers, drained and rinsed
  • 2 tablespoons chopped fresh parsley
  • lemon slices for garnish (optional)

Instructions

  1. Prepare Chicken: Pound chicken breasts to 1/2-inch thickness. Dredge in flour mixture.
  2. Cook Chicken: Cook in butter and oil until golden brown and cooked through.
  3. Make Sauce: Deglaze skillet with wine/broth. Add broth, lemon juice, capers. Simmer.
  4. Finish Dish: Stir in butter, return chicken to skillet, spoon sauce over. Garnish and serve.
