Instructions
- Heat the Oil and Season Chicken: Begin by heating the olive oil in a large skillet over medium-high heat. Season the chicken breasts evenly with smoked paprika, salt, and black pepper.
- Sear the Chicken: Place the seasoned chicken breasts in the hot skillet and sear until golden brown on both sides, about 3-4 minutes per side. Once browned, remove the chicken from the skillet and set aside.
- Sauté Onion and Garlic: In the same skillet, add the diced onion and minced garlic. Sauté until soft and fragrant, approximately 2 minutes.
- Toast the Rice: Stir in the long-grain white rice, allowing it to toast lightly for about 1 minute while stirring frequently to prevent burning.
- Add Liquids and Simmer: Pour in the chicken broth and heavy cream, scraping the bottom of the skillet to loosen any browned bits for added flavor. Bring the mixture to a gentle simmer.
- Return Chicken and Cook: Nestle the seared chicken breasts back into the skillet atop the rice mixture. Cover the skillet and reduce heat to low. Allow to cook for 18-20 minutes until the rice is tender and the chicken is thoroughly cooked.
