  • 2 cloves garlic, minced
  • 1 (1 oz) packet taco seasoning
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (8 oz) package cream cheese, cubed
  • 1 cup sour cream
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste

For Garnish:

  • Chopped cilantro
  • Shredded cheese (optional)

Instructions

  1. Heat the olive oil: In a large pot, heat olive oil over medium heat.
  2. Cook the meat: Add ground beef or turkey, cook until browned.
  3. Add aromatics: Add onion and garlic, sauté until softened.
  4. Season the soup: Stir in taco seasoning, Rotel, black beans, and corn.
  5. Add broth: Pour in chicken broth and bring to a simmer.
  6. Finish the soup: Reduce heat, add cream cheese until melted, then stir in sour cream until smooth.
