Potato Soup:
- 6 cups peeled and diced russet potatoes
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 teaspoon salt
- ½ teaspoon black pepper
Additional Ingredients:
- 1 cup sour cream
- 1½ cups shredded cheddar cheese
- 1 cup whole milk
- 4 slices cooked bacon, crumbled (optional)
- 2 tablespoons chopped fresh chives (optional)
Instructions
- Add Ingredients to Crock Pot: Add diced potatoes, onion, garlic, chicken broth, salt, and pepper to the crock pot.
- Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until potatoes are tender.
- Blend: Use an immersion blender to slightly blend the soup, leaving some chunks for texture, or mash gently with a potato masher.
- Combine: Stir in sour cream, cheddar cheese, and milk until well combined.
- Heat Through: Cook on low for an additional 15 to 20 minutes until everything is heated through and cheese is melted.
- Serve: Serve hot, topped with crumbled bacon and chives if desired.
Notes
- For a creamier texture, substitute heavy cream for milk.
- To make it vegetarian, use vegetable broth and omit the bacon.
- Sharp cheddar gives the best flavor, but any melting cheese works.
