- 1 pound boneless, skinless chicken breasts
- 10 ounces uncooked spaghetti (broken in half)
- 1 (10.5-ounce) can cream of chicken soup
- 1 (10.5-ounce) can cream of mushroom soup
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
- 1/2 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese (divided)
- 4 ounces cream cheese (cubed)
- 1 tablespoon olive oil
- Chopped parsley for garnish (optional)
Instructions
- Place the chicken breasts: In the bottom of a greased slow cooker.
- Add ingredients: Cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, chicken broth, garlic powder, onion powder, and black pepper. Stir gently.
- Cook: Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours until chicken is cooked.
- Shred chicken: Remove, shred, and return to crockpot.
- Add noodles and cheeses: Add spaghetti, cream cheese, and 1 1/2 cups of cheddar. Stir well.
- Final cooking: Cover and cook on high for 20 to 30 minutes until pasta is tender.
- Top with cheese: Sprinkle remaining cheddar, cover for 5 minutes until melted, and serve warm.
Notes
- For extra heat, use hot Rotel or add crushed red pepper flakes.
- If the sauce thickens too much, stir in a splash of milk or broth before serving.
