This Easy Crockpot Chicken Spaghetti is a delicious one-pot meal that is creamy, cheesy, and packed with flavor. Perfect for a busy day when you want a comforting dinner ready with minimal effort.

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 10 ounces uncooked spaghetti (broken in half)
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese (divided)
  • 4 ounces cream cheese (cubed)
  • 1 tablespoon olive oil
  • Chopped parsley for garnish (optional)

Instructions

  1. Place the chicken breasts: In the bottom of a greased slow cooker.
  2. Add ingredients: Cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, chicken broth, garlic powder, onion powder, and black pepper. Stir gently.
  3. Cook: Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours until chicken is cooked.
  4. Shred chicken: Remove, shred, and return to crockpot.
  5. Add noodles and cheeses: Add spaghetti, cream cheese, and 1 1/2 cups of cheddar. Stir well.
  6. Final cooking: Cover and cook on high for 20 to 30 minutes until pasta is tender.
  7. Top with cheese: Sprinkle remaining cheddar, cover for 5 minutes until melted, and serve warm.

Notes

  • For extra heat, use hot Rotel or add crushed red pepper flakes.
  • If the sauce thickens too much, stir in a splash of milk or broth before serving.
