Beef Stew:

  • 1 1/2 pounds beef stew meat
  • 1 tablespoon olive oil

Seasonings:

  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce and Pasta:

  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup beef broth
  • 8 oz uncooked bowtie pasta (farfalle)
  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Sear the Beef: In a skillet, brown the beef stew meat in olive oil until all sides are browned.
  2. Prepare the Crockpot: Transfer the beef to the crockpot and add onion, garlic, seasonings, tomatoes, cream of mushroom soup, and beef broth. Stir well.
  3. Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours until beef is tender.
  4. Cook the Pasta: Cook bowtie pasta separately, then add to the crockpot along with cheese. Let it melt and combine.
  5. Serve: Garnish with parsley and enjoy!
