Chicken and Vegetables:
- 2 pounds boneless skinless chicken breasts or thighs
- 4 medium potatoes, cut into chunks
- 3 large carrots, sliced

Sauce:
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Garnish:
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the Ingredients: Place the potatoes, carrots, onion, and garlic in the bottom of a slow cooker. Lay the chicken on top of the vegetables.
- Make the Sauce: In a small bowl, whisk together the cream of chicken soup, chicken broth, thyme, paprika, salt, and black pepper. Pour the mixture evenly over the chicken and vegetables.
- Cook: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and the vegetables are cooked through.
- Finish and Serve: Before serving, shred the chicken if desired, stir everything together, and garnish with fresh parsley.
