Description

Easy Date Snickers are a delicious and healthier twist on the classic candy bar, featuring Medjool dates stuffed with a creamy peanut butter filling, crunchy roasted peanuts, and coated in rich dark chocolate. This no-bake dessert is simple to prepare, making it a perfect sweet treat for snacks or gatherings with a delightful combination of flavors and textures.

Ingredients

Scale

Dates and Filling

  • 12 Medjool dates, pitted
  • 1/2 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon sea salt, plus extra for sprinkling
  • 2 tablespoons roasted peanuts

Chocolate Coating

  • 1/2 cup dark chocolate chips or melting chocolate

Instructions

  1. Prepare Dates: Begin by carefully removing the pits from the Medjool dates if not already pitted. Use a small spoon or fingers to create a small cavity inside each date for the filling.
  2. Make Peanut Butter Filling: In a bowl, combine the creamy peanut butter with honey or maple syrup and a pinch of sea salt to taste. Mix well to create a smooth, sweet, and salty filling.
  3. Stuff Dates: Fill each date cavity with about a teaspoon of the peanut butter mixture. Press a few roasted peanuts on top of the filling for added crunch and texture.
  4. Set on Tray: Place the stuffed dates on a parchment-lined tray, prepping them for the chocolate coating.
  5. Melt Chocolate: Melt the dark chocolate chips gently using a microwave-safe bowl in short bursts or over a double boiler until smooth and shiny.
  6. Coat Dates: Using a fork or spoon, drizzle or dip each stuffed date into the melted chocolate, ensuring they are well coated and covered evenly.
  7. Chill and Set: Return the chocolate-coated dates to the parchment paper, sprinkle a small amount of sea salt on top if desired, and refrigerate for about 30 minutes or until the chocolate hardens.
  8. Serve and Store: Once set, serve immediately or store in an airtight container in the refrigerator for up to one week.

Notes

  • For a nut-free version, substitute peanut butter with sunflower seed butter and top with pumpkin seeds instead of peanuts.
  • Adding a splash of vanilla extract or a pinch of cinnamon to the peanut butter mixture can enhance flavors.
  • For extra crunch and texture, mix in crushed pretzels or coconut flakes before coating with chocolate.
