Description

These Easy Fresh Milled Flour Cookies are a delightful treat made with wholesome fresh milled whole wheat flour, chocolate chips, and optional nuts. They are perfect for a quick and delicious homemade cookie fix.

Ingredients

Scale

Main Ingredients:

  • 1 cup unsalted butter (softened)
  • 3/4 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 2 1/4 cups fresh milled whole wheat flour (such as soft white wheat)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Additional:

  • 1 cup chocolate chips or chopped dark chocolate
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the fresh milled flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  4. Add Mix-Ins: Fold in chocolate chips and nuts if using.
  5. Bake: Scoop dough into heaping tablespoon-sized balls and place them about 2 inches apart on the prepared baking sheet. Bake for 9–11 minutes, or until the edges are golden and the centers are just set.
  6. Cool and Enjoy: Let cookies cool on the pan for 5 minutes before transferring to a wire rack.

Notes

  • Fresh milled flour absorbs more moisture, so avoid overbaking to keep cookies soft.
  • Use soft white wheat berries for a lighter flavor and texture.
  • Dough can be chilled for up to 24 hours to deepen flavor and prevent spreading.
