Instructions
- Rinse the Lentils: Thoroughly rinse the split red lentils under cold water, drain well, and remove any impurities to ensure cleanliness and quality of the dough.
- Soak the Lentils: Place the rinsed lentils in a bowl, cover with fresh water, and soak for at least 3 hours or preferably overnight to soften them for easier blending.
- Preheat the Oven: Set your oven temperature to 360ºF (182ºC) to prepare it for baking the rolls later.
- Prepare the Dough: In a food processor, combine the soaked and drained lentils, psyllium husks, optional neutral-flavored oil, water, and salt. Blend until the mixture becomes a sticky dough. Then, add the baking soda on top and pour the apple cider vinegar over it to initiate the activation. Blend again briefly until all ingredients are well incorporated.
- Shape the Rolls: Divide the dough evenly into 8 portions. Shape each portion into a ball and place them on a baking sheet lined with parchment paper or a silicone mat. Optionally, sprinkle the tops with sesame seeds for a decorative and nutty flavor.
- Bake: Place the baking sheet in the preheated oven and bake the rolls for approximately 20 minutes, or until they develop a golden brown crust.
- Cool and Serve: Remove the rolls from the oven and allow them to cool on a wire rack for about 10 minutes before serving to let the texture set and flavors develop.
