- Prepare the dough: In a medium saucepan over medium heat, combine the water, 2 1/2 tablespoons sugar, salt, and 2 tablespoons vegetable oil. Bring the mixture to a boil, then remove from heat. Stir in the all-purpose flour quickly until a smooth dough forms.
- Heat oil for frying: In a large deep skillet or saucepan, heat the vegetable oil to 375°F (190°C). Ensure there is enough oil to fully submerge the churros while frying.
- Pipe the churros: Transfer the dough into a piping bag fitted with a large star tip. Carefully pipe strips of dough, about 4 to 6 inches in length, directly into the hot oil. Cut the dough with scissors as needed.
- Fry until golden: Fry a few churros at a time for about 2 to 3 minutes on each side or until they turn golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
- Coat with cinnamon sugar: Mix 1/2 cup granulated sugar with ground cinnamon in a shallow dish. While the churros are still warm, roll them thoroughly in the cinnamon sugar mixture to coat.
- Make the chocolate sauce: Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and stir in the chopped semi-sweet chocolate and butter until the sauce is smooth and glossy.
- Serve: Serve the warm churros alongside the rich chocolate sauce for dipping, enjoying immediately for the best texture and flavor.
