Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter (room temperature)
- 1 1/2 cups granulated sugar
- 4 large eggs (room temperature)
- 1 tablespoon pure vanilla extract
- 1 cup whole milk (room temperature)
- 1/2 cup rainbow sprinkles (plus extra for topping)
Frosting:
- 3 cups powdered sugar
- 1/2 cup unsalted butter (softened)
- 2–3 tablespoons heavy cream
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line with parchment paper.
- Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Mix Wet Ingredients: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
- Combine Ingredients: Alternately add dry ingredients and milk to the wet mixture. Fold in rainbow sprinkles.
- Bake: Divide batter into pans and bake for 25-30 minutes until a toothpick comes out clean. Cool cakes on a wire rack.
- Make Frosting: Beat softened butter, powdered sugar, vanilla, salt, and heavy cream until smooth.
- Frost the Cake: Frost cooled cakes and decorate with sprinkles.
Notes
- Use jimmies-style sprinkles for best results as nonpareils may bleed color.
- For added flavor, try adding a splash of almond extract.
