Description

This Easy Homemade Sprinkle Cake is a delightful treat that’s perfect for any celebration. Moist vanilla cake studded with colorful sprinkles, filled and frosted with a rich buttercream, and topped with extra sprinkles for a festive touch.

Ingredients

Scale

Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (room temperature)
  • 1 1/2 cups granulated sugar
  • 4 large eggs (room temperature)
  • 1 tablespoon pure vanilla extract
  • 1 cup whole milk (room temperature)
  • 1/2 cup rainbow sprinkles (plus extra for topping)

Frosting:

  • 3 cups powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 23 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Mix Wet Ingredients: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  4. Combine Ingredients: Alternately add dry ingredients and milk to the wet mixture. Fold in rainbow sprinkles.
  5. Bake: Divide batter into pans and bake for 25-30 minutes until a toothpick comes out clean. Cool cakes on a wire rack.
  6. Make Frosting: Beat softened butter, powdered sugar, vanilla, salt, and heavy cream until smooth.
  7. Frost the Cake: Frost cooled cakes and decorate with sprinkles.

Notes

  • Use jimmies-style sprinkles for best results as nonpareils may bleed color.
  • For added flavor, try adding a splash of almond extract.
