Pork Carnitas:

  • 3 pounds pork shoulder (boneless), cut into large chunks
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/2 cup chicken broth

Instructions

  1. Sear the Pork: Turn the Instant Pot to Sauté mode. Add olive oil and sear the pork pieces until browned. Set aside.
  2. Sauté Aromatics: Sauté onion and garlic until fragrant.
  3. Add Spices: Return pork to the pot, add spices, and coat the pork.
  4. Add Liquids: Pour in orange juice, lime juice, and chicken broth. Stir well.
  5. Pressure Cook: Close the lid, set to Manual High Pressure for 35 minutes. Allow natural pressure release.
  6. Shred and Crisp: Remove pork, shred, and broil for crispy edges if desired.
