  • 1/2 cup sour cream
  • 1/2 cup mayonnaise

  • 1/4 cup crushed pork rinds or almond flour (for topping, optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the chicken: In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 5 to 7 minutes until browned and cooked through. Remove from the skillet and set aside.

  4. Prepare the casserole: In a large mixing bowl, combine sour cream, mayonnaise, cheddar cheese, Parmesan cheese, paprika, thyme, salt, and pepper. Stir in the cooked chicken and vegetables until well coated. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle with crushed pork rinds or almond flour if using.
