For the casserole:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small onion, chopped
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup salsa
  • 8 small flour or corn tortillas, cut into halves
  • 2 cups shredded Mexican blend cheese, divided
  • 1/2 cup sliced black olives (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven and prepare the filling: Preheat the oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add the ground beef and onion, cook until browned and onion is softened. Drain excess fat.
  2. Mix in the ingredients: Stir in taco seasoning, black beans, corn, tomatoes with green chilies, and salsa. Cook until heated through.
  3. Assemble the casserole: Grease a 9×13-inch baking dish. Layer meat mixture, tortillas, and cheese, repeating until all ingredients are used. Top with cheese and olives if desired.
  4. Bake: Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is melted and bubbly.
  5. Rest and serve: Let the casserole rest for 5 minutes before slicing. Garnish with fresh cilantro before serving.
