For the Mexican Pizzas:

  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/2 cup water
  • 1 can (16 ounces) refried beans
  • 8 small flour tortillas
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup chopped tomatoes
  • 1/4 cup sliced black olives (optional)
  • 2 tablespoons vegetable oil (for brushing tortillas)

Optional Toppings:

  • Sour cream
  • Guacamole
  • Jalapeño slices
  • Shredded lettuce
  • Hot sauce

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Cook ground beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat, then add taco seasoning and water. Simmer for 5–7 minutes until thickened.
  3. Warm refried beans: In a separate saucepan, warm the refried beans over low heat.
  4. Prepare tortillas: Lightly brush both sides of the tortillas with oil and bake for 3–4 minutes per side until golden and slightly crisp.
  5. Assemble pizzas: Spread a layer of refried beans on four tortillas, top with seasoned beef, another tortilla, salsa, and cheese. Bake for 5–7 minutes until cheese is melted.
  6. Add toppings: Top with green onions, tomatoes, and olives. Slice and serve with optional toppings.
