For the Mexican Pizzas:
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1/2 cup water
- 1 can (16 ounces) refried beans
- 8 small flour tortillas
- 1 cup shredded Mexican blend cheese
- 1/2 cup salsa
- 1/4 cup chopped green onions
- 1/4 cup chopped tomatoes
- 1/4 cup sliced black olives (optional)
- 2 tablespoons vegetable oil (for brushing tortillas)
Optional Toppings:
- Sour cream
- Guacamole
- Jalapeño slices
- Shredded lettuce
- Hot sauce
Instructions
- Preheat oven: Preheat oven to 400°F (200°C).
- Cook ground beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat, then add taco seasoning and water. Simmer for 5–7 minutes until thickened.
- Warm refried beans: In a separate saucepan, warm the refried beans over low heat.
- Prepare tortillas: Lightly brush both sides of the tortillas with oil and bake for 3–4 minutes per side until golden and slightly crisp.
- Assemble pizzas: Spread a layer of refried beans on four tortillas, top with seasoned beef, another tortilla, salsa, and cheese. Bake for 5–7 minutes until cheese is melted.
- Add toppings: Top with green onions, tomatoes, and olives. Slice and serve with optional toppings.
Notes
- You can substitute ground turkey or shredded chicken for the beef.
- Use tostada shells for a crispier texture.
