- 1 cup canned pumpkin purée
- 1 cup heavy cream or half-and-half

- 1/4 teaspoon red pepper flakes (optional)
- salt and black pepper to taste
- 12 oz pasta (such as fettuccine or penne)
- 1/4 cup reserved pasta water (as needed)
- chopped fresh sage or parsley for garnish
Instructions
- Cook the Pasta: Boil the pasta in salted water, then drain and set aside.
- Prepare the Sauce: Sauté onion and garlic, add pumpkin, cream, Parmesan, nutmeg, and red pepper. Season with salt and pepper. Simmer until thickened.
- Combine and Serve: Toss cooked pasta in the sauce, adding reserved pasta water if needed. Heat through, garnish, and serve.

- For a dairy-free version, use coconut milk and nutritional yeast instead of cream and Parmesan.
