  • 1 tablespoon coconut oil or vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Spices:

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon smoked paprika

Additional Ingredients:

  • 1 cup dried red lentils, rinsed
  • 3 cups vegetable broth
  • 1 can (14 ounces) diced tomatoes
  • 1/2 cup coconut milk
  • Salt and black pepper, to taste
  • Juice of 1/2 lemon
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat the oil: Heat the coconut oil in a large pot over medium heat.
  2. Cook the aromatics: Add the chopped onion and cook until softened. Stir in the garlic and ginger.
  3. Add the spices: Add the cumin, coriander, turmeric, and smoked paprika, and cook for 1 minute.
  4. Cook the lentils: Add the lentils, vegetable broth, and diced tomatoes. Simmer until lentils are soft.
  5. Finish the dish: Stir in coconut milk, season with salt, pepper, and lemon juice. Serve hot, garnished with cilantro.
