Lime Juice Marinade:

Vegetables and Herbs:

  • 1 medium tomato (seeded and diced)
  • 1/2 red onion (finely diced)
  • 1 jalapeño (seeded and minced)
  • 1/2 cup fresh cilantro (chopped)
  • 1 cucumber (peeled, seeded, and diced)
  • 1 avocado (diced)

Seasoning:

  • Salt and pepper to taste

For Serving:

  • Tortilla chips

Instructions

  1. Marinate Shrimp: Place the chopped shrimp in a large glass bowl and pour the fresh lime juice over it until completely covered. Stir gently, then cover and refrigerate for about 30 minutes to 1 hour, or until the shrimp turn pink and opaque.
