For the Butter Chicken:

  • 2 pounds boneless, skinless chicken thighs (cut into chunks)
  • 1 tablespoon olive oil
  • 1 small yellow onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder (optional)
  • 1 teaspoon salt
  • 1 can (15 oz) tomato sauce
  • 1/2 cup plain Greek yogurt
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter

For Serving:

  • 3 cups cooked basmati rice
  • Chopped cilantro (for garnish)

Instructions

  1. In a skillet, sauté aromatics: Heat olive oil over medium heat. Add onion, garlic, and ginger, sauté until fragrant and soft, about 4 minutes. Transfer to the slow cooker.
  2. Cook the chicken: Add chicken, tomato sauce, spices, and salt to the slow cooker. Cover and cook on low for 5–6 hours or on high for 3–4 hours until tender.
  3. Finish the dish: Thirty minutes before serving, stir in Greek yogurt, heavy cream, and butter. Let it cook uncovered to thicken slightly. Serve over cooked basmati rice, garnished with cilantro.
