  • 1 ½ pounds boneless, skinless chicken thighs or breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup canned coconut milk
  • 2 cups frozen corn kernels
  • 1 cup creamed corn
  • 1 medium potato, peeled and diced
  • 1 carrot, sliced
  • 1 teaspoon ground ginger
  • 1 tablespoon soy sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 green onions, sliced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. Add Ingredients to Slow Cooker: Combine chicken, onion, garlic, broth, coconut milk, corn, potato, carrot, ginger, soy sauce, salt, and pepper in the slow cooker.
  2. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked and veggies are tender.
  3. Shred Chicken: Remove chicken, shred, and return to soup.
  4. Thicken (Optional): If desired, stir in cornstarch slurry and cook on high for 15-20 minutes.
  5. Serve: Garnish with green onions and enjoy hot.

Notes

  • This soup is naturally creamy from the coconut milk and creamed corn.
  • You can make it lighter by using regular milk and omitting the creamed corn.
