Sweet Potato Mixture

  • 4 medium sweet potatoes, peeled and cubed

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare it for baking the casserole later.
  2. Boil sweet potatoes: In a large pot, add the peeled and cubed sweet potatoes and cover with water. Bring to a boil and cook for 10-15 minutes until the potatoes are fork-tender. Drain well and return them to the pot.
  3. Mash the potatoes: Use a potato masher or fork to mash the boiled sweet potatoes until smooth without lumps.
  4. Mix in flavorings: Stir in the milk, melted butter, brown sugar, vanilla extract, cinnamon, nutmeg, and salt into the mashed sweet potatoes. Mix thoroughly until the mixture is smooth and well combined.
  5. Transfer to baking dish: Grease a 9×13-inch baking dish and spread the sweet potato mixture evenly inside.
  6. Prepare the topping: In a small bowl, combine the chopped pecans, brown sugar, and melted butter. Sprinkle this mixture evenly over the sweet potatoes in the baking dish.
  7. Add marshmallows (optional): If you like a sweeter, gooier topping, scatter mini marshmallows evenly over the pecan topping.
