Ground Beef Mixture:
- 1 lb ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
Soup Base:
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes with green chilies (such as Rotel)
- 1 (8 oz) can tomato sauce
- 1 packet taco seasoning
- 1 teaspoon chili powder (optional)
- 2 cups beef or chicken broth
- Salt and pepper to taste
Toppings:
- Shredded cheese
- Sour cream
- Avocado
- Tortilla chips
- Chopped cilantro
Instructions
- Cook Ground Beef: In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Saute Onion and Garlic: Add the diced onion and garlic, and cook for 2–3 minutes until softened.
- Add Ingredients: Stir in the black beans, corn, diced tomatoes, tomato sauce, taco seasoning, chili powder (if using), and broth. Bring to a simmer and cook uncovered for 15–20 minutes to allow flavors to develop.
- Season and Serve: Taste and adjust seasoning with salt and pepper if needed. Ladle into bowls and serve hot with your favorite toppings.
Notes
- This soup can be made ahead and freezes well.
- For a spicier version, add a diced jalapeño or use hot taco seasoning.
