  • 1 can (13.5 ounces) coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro, chopped
  • cooked jasmine rice for serving
  • lime wedges for garnish

Instructions

  1. Prepare the Aromatics: Heat vegetable oil in a skillet, sauté onion until soft, then add garlic and ginger.
