Description

Chicken Thighs:

  • 2 pounds boneless, skinless chicken thighs

Seasoning:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste

Sauce:

  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach, roughly chopped
  • Fresh basil, for garnish

Instructions

  1. Season the Chicken: Season the chicken thighs with salt, pepper, Italian seasoning, and paprika.
  2. Sear the Chicken: In a skillet over medium heat, sear the chicken for 2–3 minutes on each side until lightly browned. Transfer chicken to the slow cooker.
  3. Prepare the Sauce: In the same skillet, sauté the onion and garlic until fragrant, then add to the slow cooker along with sun-dried tomatoes and chicken broth.
  4. Cook: Cover and cook on low for 5–6 hours or on high for 3–4 hours, until the chicken is tender.
  5. Finish: About 30 minutes before serving, stir in the heavy cream, Parmesan, and chopped spinach. Let it cook uncovered to thicken slightly. Garnish with fresh basil before serving.

  • For extra richness, stir in a tablespoon of cream cheese with the Parmesan.
