Main Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
Additional Ingredients:
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 2 1/2 cups cooked shredded chicken
- 3 cups low-sodium chicken broth
- 1/2 cup sour cream
- 1/2 cup half-and-half or milk
- Salt and black pepper to taste
- Fresh cilantro, lime wedges, shredded cheese, and tortilla chips for serving
Instructions
- Prepare the Aromatics: Heat olive oil in a large pot, sauté onion until soft. Add garlic, cumin, oregano, chili powder, and cayenne, cook for another minute.
- Cook the Chili: Add white beans, green chiles, shredded chicken, and chicken broth. Simmer for 15–20 minutes. Reduce heat, stir in sour cream and half-and-half until creamy.
- Season and Serve: Season with salt and pepper. Serve hot with cilantro, lime juice, cheese, and tortilla chips.
Notes
- For a thicker chili, mash some of the beans before adding the dairy.
- You can use rotisserie chicken to save time.
- To make it spicier, double the green chiles or add jalapeños.
