  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)

Additional Ingredients:

  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 2 1/2 cups cooked shredded chicken
  • 3 cups low-sodium chicken broth
  • 1/2 cup sour cream
  • 1/2 cup half-and-half or milk
  • Salt and black pepper to taste
  • Fresh cilantro, lime wedges, shredded cheese, and tortilla chips for serving

Instructions

  1. Prepare the Aromatics: Heat olive oil in a large pot, sauté onion until soft. Add garlic, cumin, oregano, chili powder, and cayenne, cook for another minute.
  2. Cook the Chili: Add white beans, green chiles, shredded chicken, and chicken broth. Simmer for 15–20 minutes. Reduce heat, stir in sour cream and half-and-half until creamy.
  3. Season and Serve: Season with salt and pepper. Serve hot with cilantro, lime juice, cheese, and tortilla chips.

Notes

  • For a thicker chili, mash some of the beans before adding the dairy.
  • You can use rotisserie chicken to save time.
  • To make it spicier, double the green chiles or add jalapeños.
