Zucchini Mixture:

  • 4 cups sliced zucchini
  • 1 small onion, diced

Breadcrumb Mixture:

  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted

Seasonings:

  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional:

  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. Prepare the zucchini: In a large bowl, combine the sliced zucchini and diced onion.
  3. Mix the egg mixture: In another bowl, whisk together the beaten eggs, milk, melted butter, garlic powder, oregano, salt, and black pepper.
  4. Combine ingredients: Add the cheddar cheese, Parmesan cheese, and breadcrumbs to the zucchini mixture and toss to combine.
  5. Add egg mixture: Pour the egg mixture over the zucchini mixture and stir until evenly coated.
  6. Bake: Transfer the mixture to the prepared baking dish and spread it out evenly. Bake for 35-40 minutes or until the casserole is golden brown on top and set in the center.
