Zucchini Mixture:
- 4 cups sliced zucchini
- 1 small onion, diced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
Breadcrumb Mixture:
- 1 cup breadcrumbs
- 2 large eggs, beaten
- 1/2 cup milk
- 2 tablespoons unsalted butter, melted
Seasonings:
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional:
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
- Prepare the zucchini: In a large bowl, combine the sliced zucchini and diced onion.
- Mix the egg mixture: In another bowl, whisk together the beaten eggs, milk, melted butter, garlic powder, oregano, salt, and black pepper.
- Combine ingredients: Add the cheddar cheese, Parmesan cheese, and breadcrumbs to the zucchini mixture and toss to combine.
- Add egg mixture: Pour the egg mixture over the zucchini mixture and stir until evenly coated.
- Bake: Transfer the mixture to the prepared baking dish and spread it out evenly. Bake for 35-40 minutes or until the casserole is golden brown on top and set in the center.
- Finish: Remove from the oven and sprinkle with fresh parsley if desired. Let cool slightly before serving.
